docs: Fix serverpod insights broken image URL

• This PR aims to address and resolve 4740 issue

Changes:

• Added local static image in static/img/ directory (static/img/serverpod-insights.png) and referenced them in docs/index.md and docs/09-tools/01-insights.md files.

Got it. For clarity, I added a note in README.md under Add Version section to not include versioned docs for patched versions.
