Updates the Eclipse tutorial screenshots and refreshes the ROS include path examples.

Changes made:

• Replaced outdated Eclipse screenshots with updated ones taken on a newer ROS 2 setup.
• Updated example include paths from /opt/ros/iron/... to /opt/ros/lyrical/...
