docs: catch the README up with recent features#69

Documents what recent PRs shipped but the README missed: 0-30% controller deadzone (owenselles#46), H.265 Main10 SDP handling and the HDR-preserving VideoToolbox decoder (owenselles#49), the pause menu sidebar, statistics HUD, and surround audio (owenselles#62).
