Add test-data checkpoints to assets folder in pipeline. Each .rds needs to be stored.

### Description of feature

This is necessary to feed input into nf-tests for each module in the pipeline. This counters the need to run a setup { } block which would be highly inefficient for a pipeline that is linear and heavily reliant on input from subsequent steps.
