docs: align repository docs with InferEdge pipeline

Summary

• Aligned repository documentation with the current InferEdge pipeline.
• Removed or updated stale wording and resolved limitations.
• Clarified the repository role within Forge → Runtime → Lab → AIGuard.

Validation

• cmake --build build -j: success after rerun with local build write permission
• ctest --test-dir build --output-on-failure: success (no CTest tests registered)
• bash scripts/smoke_forge_handoff.sh: success after rerun with local result/build write permission
• bash scripts/smoke_default.sh: success after rerun with local result/build write permission

• Improves cross-repository consistency.
• Reduces stale or misleading portfolio claims.

• Production worker daemon, persistent DB/queue, frontend, upload flow, auth, and billing remain future work.
• No documents were deleted.
• Pre-existing local untracked files build-ort/ and examples/model.onnx were left untouched and not included.
