Move Knative to graduated and Metal³ to incubating

• Knative: Moved from examples/incubating.md to examples/graduated.md, positioned alphabetically between KEDA and KubeEdge
• Metal³: Moved from examples/sandbox_l-r.md to examples/incubating.md, positioned alphabetically between Longhorn and NATS
• README.md: Updated project links to reflect new maturity levels and positions

Both entries preserve their original logo table formats (Knative with color-only variants, Metal³ with web/icon layout).
