I restructured the so-ase package as discussed with separate subdirectories for models, e.g. /fesom, /oifs, and more general stuff, e.g. /plotting.
I also incorporated the functions formerly defined in the cavity interpolation workflows into the so-ase toolbox as callable functions.
In addition, I removed the regression functions. They did not fit the structure of the repo and need a complete makeover.
