[codex] sync egonex organization metadata

Summary

• Sync public project metadata from the original personal repo identity to the Egonex organization identity.
• Update homepage and README messaging to connect the open-source Understand Anything project with Egonex's broader narrative: "Understand Anything. Understand Anyone. AI should help people, not replace them."
• Route GitHub, installer, issue, manifest, and docs links through Egonex-AI/Understand-Anything while keeping the public display name as Egonex.
• Remove personal funding/contact/community entry points and the confusing subscription/maintainer hero copy.
• Fix the demo dashboard base URL fallback so /demo/index.html works in the homepage preview.

Validation

• git diff --check
• JSON manifest validation with python3 -m json.tool
• pnpm --filter homepage build
• pnpm --filter @understand-anything/dashboard build:demo
• Local HTTP checks returned 200 for homepage, README preview, and /demo/index.html

Yuxiang Lin remains only in MIT license copyright text and README license footer as legal copyright attribution. Public-facing creator copy now uses Lum1104.
