feat: add user activity dashboard

Summary:

• Adds GET /api/module/users/me/activity for the authenticated user
• Returns the most recent 50 activity events with optional date filtering
• Extends the activity entity to include resource and metadata fields

Validation:

• npm run build still reports pre-existing unrelated backend errors in other modules
