v2.1.0+1.21.1 - Update to 1.21.1, Compressed Textures and Polydex is back!

Hello!
First of all, thanks to @unilock for the port and all of the improvements mentioned above.
This update targets the to-be-released version 5.7.0 of PolyMc for Minecraft 1.21.1.

The new changes (by @unilock) include:

• Texture compression with oxipng
• Readded and improved Polydex support
  • Now you will be able to see yields for different Forge tiers (eg. iron yield with T1 vs. T3)
• Code improvements and bug fixes

Also since serverside modding is becoming mainstream, starting this version (once PolyMc 5.7.0 fully releases) this mod will be available on Modrinth!
