Configured the container to run as read-only as per #95
Nginx pid file, temp and cache directories and php83-fpm socket are stored in /opt/flashpaper
I kept the /var/log but don't think that is actually required.
Nginx and php83 errors are redirected to stderr, so errors can be visible in docker logs
Added a simple health check to docker-compose
