Unpin numpy dependency

Currently numpy has to be pinned to <2.0 due to a bug with the stardist library stardist/stardist#297

Once this issue is fixed, numpy can be unpinned again

Hi, we just released StarDist 0.9.2 that should be compatible with Numpy 1 and 2.
