Db-sync optimisation

DbSync is currently used in default kitchen-sink mode and is indexing everything.

It would be great if someone could investigate whether different config would lead to less CPU and disk space utilisation by not indexing data that the protocol doesn't require:

Recently docs have been added on the db-sync requirements for a partner chain here: https://github.com/input-output-hk/partner-chains/blob/master/toolkit/data-sources/db-sync/src/lib.rs#L63-L77

With current recommended settings from Partner Chains it doesn't reduce the amount of data db-sync syncs by much at all.
