I am looking to replace olm with this package in pantalaimon so I was curious if there is any documentation?

Yes, but not many: #11.

The API shape is fairly similar to the one from libolm. The bindings also attempt to keep the API close to the Rust API, so the Rust docs might be helpful https://docs.rs/vodozemac/latest/vodozemac/.

There's a PR in matrix-nio to use these bindings. Do packages using nio need adjustments to work with it? For example Pantalaimon seems to be broken right now as verification doesn't work anymore.

I don't think they'll need to change. Verification on Pantalaimon is more likely to be broken due to the protocol changing how it's doing the verification.
