Update StoryBook

• StoryBook needs to be updated to v8. We currently use v6.5

• Also the stories need to be updated to cover all configuration options.

• Ideally we should also use it to demonstrate/test SDK methods.

I'd like to take this issue and work on upgrading Storybook to v8,
and update the stories to include all configuration options.
