I've tried your docker image and the example las2las program seems to work just fine, however for some reason the blast2dem one refuses to do anything.
I am able to reach the binary with your instructions, however after starting the program it shuts down after 0 seconds and doesn't create any new files (despite the fact it is stated otherwise, screenshot below).
I am really new to docker, so if it is a related problem and you've seen similar issues with the container your suggestion would be appreciated.

Edit: lasgrid seems to work fine tho', which is a good workaround in my case.
