make_fastq_info_sheet.sh should be more robust to differences in file name structure

Needs more error trapping, OR a command line argument describing where fields are contained in the naming structure, OR should be deprecated and not used and fastq_files.txt should be created manually to start off the process.

I've been using it as a skeleton script just so I don't have to start from zero every time, but I make alterations to the script for each project. I don't think fastq file names are standardized enough for it to ever work for multiple projects without modification.
