change height scaling for `-` (gap) character in logoplots

The - character is used to denote gaps in an alignment. Users might want to use this character in the logoplot. However, because the - character is "shorter" than a letter, the logoplots end up looking quite strange.

We should edit the - character so that it matches the heights of the others
