Separate the file format layout tables from the list of changes for each version

and talking about the docs, i have complaints
i dislike that the definitions of the structs are mixed with the "changelog"

Once #86 is resolved, it might be easier to add a textual summary of the changes that can be toggled on or off on its own.

No changelog should be needed with the new diff highlights. Hopefully, the modified fields being highlighted will be sufficient.
