[Nerite] Fix stability pool deposit event handling in subgraph

Currently, the stability pool deposits are not being indexed in the subgraph. Must fix.

Labeled this as low priority since we do direct read calls in the UI for stability pool deposits now, but would be nice to still get it working to index in the subgraph too.
