Permanently add some NEMO output for `ece3-postproc`

As ece3-postproc is an important monitor / analyse tool for the ECE community, it is best to permanently add the variables required by this tool as observed by ECE portal issue 1312-78.

The first variable encountered is:
Omon wfonocorr

But more might follow, and can be posted in this issue.
