[BUG]: Crash when hovering or previewing items with the Alchemical Collection enchantment

Description
The game crashes when hovering over an item that already has the enchantment alchemical_collection, or when attempting to apply it using an anvil

Reproduction Steps
Method 1

1. Go to a structure that generated chest with item with the enchantment
2. hover over it
3. game crashes
   Video

Method 2

1. use an anvil
2. place a pickaxe and the enchantment
3. Hover over the preview item
4. game crashes
   Video

Crash Report/Logs
using an anvil to add the enchantment to the pickaxe.txt

I used a datapack to generate a chest with the enchantment already on the pickaxe..txt

Seems to be an issue with data components not getting set properly, ideally it should get and use a default value if it isn't present, not sure why I didn't do that here
