Update AssessmentProbe to map new categories and entries from mcp-agent-assessment:

  • 13 new categories (11 MCP capabilities + 2 A2A extensions)
  • 3 new summary fields (specVersion, ap2Version, erc8004ServiceUrl)
  • Error fallback updated
  • 1 new test + 4 existing tests updated

Depends on: FlowMCP/mcp-agent-assessment
