[FEAT] Restore backups

Important, but haven't had time to test.

I'd want to complete #1 first so restore is able to check if a backup exists for app/s and restore accordingly.

Could be conducted with the following
`rm -rf $DOCKER_VOLUMES$i* $DOCKER_VOLUMES$i..?* $DOCKER_VOLUMES$i.[!.]* ; tar -C $DOCKER_VOLUMES$i -xjf $TARGET$i$(date '+%Y-%m-%d').tar.bz2`
